Avocado Toast Alternative
 
Though I haven't even enjoyed a slice in 2019, I had a sudden craving for avocado toast today... but there was no bread in sight.  I whipped up savoury protein pancakes instead, and it was just as fast and simple as making toast.  That's my style of cooking.  Here's the recipe:

1/4 cup flour
1/8 cup plain protein powder (I use whey)
1/4 tsp baking soda
1/4 cup milk (I used cashew, but would usually use dairy if I had some!)
1 egg

1/2 tsp sesame oil for cooking
1/4 - 1/2 avocado
Tabasco sauce (siracha is a good substitute if you need one).

Instructions:
- Mix the dry ingredients
- Mix in the milk and egg
- Beat until combined, but the mix will likely be a bit lumpy.
- Spread the sesame oil over a warm pan
- Pour on about 1/4 of the mixture once the pan is heated
- Cook for about a minute until bubbles start to appear on the surface of the pancake, then flip.
- Cook for an aditional 30-60 seconds
- Spread remaining oil on pan onto the spot where your first pancake was made. 
- Repeat with the remaining batter.  Should make about 4 pancakes.

- Slice 1/4 - 1/2 of an avocado very thinly and spread over pancakes
- Top with fresh ground salt and Tabasco.
